RECIPES
There are many recipes used in cakes but I mainly use these 3 for my cakes because they give predictable results and cover most peoples tastes...
Traditional Fruit Cake
A common favourite, it can be as decadent as you like with rich fruit and moistened with alcohol.
Madeira
Another classic, often used as a second layer with a fruit cake for  those that don't like fruit cake - very few people will not like at least the simple Madeira. Its consistent structure makes more constructed cakes possible.
Alternative Recipe
After some trials, I have developed an alternative recipe derived from a Lemon Cake formula. Its richer with more eggs and butter and we think gives a more moist and luxurious result, the subtle Lemon hint (optional) along with a high quality vanilla give a gorgeous aroma and flavour. Tests have proven people prefer it too so this recipe has become my default for cakes now.
Chocolate
Fast becoming an essential! After much experimentation and tasting I have found a lovely chocolate cake recipe that is rich, fluffy and moist but with just enough structure to lend itself to most cake designs. There is very rarely any of this cake left over!
